Vanilla Biscuits

 

Makes about 40 biscuits

 

1 ¾ cups (175g) almond meal

½ cup (70g) tapioca flour

1 tsp baking powder

½ tsp salt

90g butter, at room temperature

½ cup honey

1 egg

1 tsp vanilla

 

In a medium bowl combine the almond meal, tapioca, baking powder and salt. Set aside. In the bowl of an electric beater cream together the butter and honey on a medium speed until smooth and fluffy. Add the egg and vanilla. Reduce speed to low and add the almond meal mixture and combine until smooth. Transfer the bowl to the fridge to chill for about 20 minutes. Preheat oven to 160°C. Line 2 baking trays with baking paper. Once chilled, place teaspoons of the mixture on the lined trays, leaving a space of about 2 inches between each biscuit as they will spread. Bake for 15-20 minutes or until golden brown. Repeat with remaining mixture. Allow to cool on a wire rack before serving.
