Pumpkin Hummus

Makes 500ml

 

1.2kg pumpkin, peeled and cut into chunks

4 Tbsp extra virgin olive oil

1 tsp salt

½ cup tahini

3 cloves garlic, roughly chopped

4 Tbsp lemon juice

1 tsp ground turmeric

1 tsp ground cumin

1 tsp ground coriander

¾ tsp paprika

½ tsp ground cinnamon

4 Tbsp water

Salt and freshly ground pepper

 

On a baking tray lined with baking paper, bake the oiled and salted pumpkin at 180°C until soft and golden brown. Allow to cool. Transfer to a food processor and add remaining ingredients. Process until smooth. Add more water if necessary. Taste and season with salt and freshly ground pepper.
